1/2 cup juice of one orange, squeezed into a tight squeeze
4 quail, quail fresh
1 orange, sliced
2 lemons, sliced
In a small saucepan combine orange juice, orange slices, lemon slices, and orange zest. Mix well and refrigerate for 2 to 3 hours.
When ready to cook quail, remove quail from freezer, and cut into 1/2 inch pieces. Place on a plate, and chill overnight.
When the quail are cool, peel, and cut into 1 inch pieces. Place on a plate, and chill overnight.
