1 tablespoon olive oil, divided
1 pound pork mincemeat, softened
1 tablespoon red wine vinegar
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
salt and pepper to taste
2 teaspoons Worcestershire sauce
1/2 teaspoon hot pepper sauce
Mince and pour 1 tablespoon olive oil into a meat pan. Roast in preheated oven until meat is cooked through, 6 to 8 hours; do not brown. Turn out fat, and continue to rub it.
Combine half-and-half cream, water, brown sugar, Worcestershire sauce, salt, pepper sauce and cherries with 1 teaspoon salt and 1/2 teaspoon pepper. Mix together well, and return mixture to pan. Simmer mixture 30 minutes, stirring occasionally.
Remove lid, and stir in meat. Simmer mixture 1 day more. Preheat oven to medium-high heat, and cook part through until internal temperature is 140.
