Triple Beef Meatballs Recipe

Ingredients

3 pounds beef tip roast

1/2 cup olive oil

1 cup beef stock

1 small onion, chopped

1 red bell pepper, chopped

1 teaspoon dried sage

1 teaspoon dried onion

1 teaspoon dried thyme

1 teaspoon dried basil

1 (2 pound) loaf Greek Deli Style Bread, warmed

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place roast in an 11x7 inch roasting pan. Spray with cooking spray. Cover roasting pan with aluminum foil, leaving 2 inches of space for roasting. Place foil on top completely.

Heat olive oil in a skillet over medium heat. Add meat so oil browns as well; cook 5 to 6 minutes on each side.

In a separate skillet, cook onions, then pepper, and red pepper. Stir in sage, thyme, basil, and basil. Let browns cook about 5 minutes, then add bread.

Bake in preheated oven for about 20 minutes. Reduce heat to 350 degrees F (175 degrees C). Cover roasting tin, and place in oven for 10 minutes. Cool slightly.
