4 ounces pork sausage
1 1/2 pounds ground beef
2/3 cup water
1/2 cup shortening for frying
1/2 cup tomato paste
1 (15 ounce) can tomato juice
1 (8 ounce) can tomato paste with juice
6 cups water
Place sausage in large microwave-safe bowl. Microwave on high 12 to 15 minutes, or until no longer pink. Drain, crumble and set aside.
Place beef in medium microwave-safe bowl. Microwave on high 30 minutes or until no longer pink; drain and set aside.
Drain tomato juice from tomatoes. Stir tomato juice into meatloaf mixture. Stir tomatoes into tomato paste with tomato juice until well blended. Transfer beef mixture to prepared pan.
Heat shortening in large skillet over medium heat. Stirring frequently, cook meatloaf surface in batches on each side to 1-inch thickness; do not brown on one side. Allow to heat through.
Fry bread slices with 2 tablespoons tomato liquid in microwave-safe bowl until golden brown. Drain briefly and place on a platter. Spoon tomato jam mixture over bread slices.
