2 eggs, beaten
1/4 cup butter
1 cup white sugar
2 tablespoons lemon extract
1 tablespoon lemon zest
Melt eggs in microwave or in small bowl in microwave or in microwave-safe bowl over low heat; stir until completely melted. Mix sugar, lemon extract and lemon peel; continue stirring, stirring until sugar is completely dissolved. Cover bowl and chill at least 30 minutes.
Heat butter or margarine in microwave or in microwave-safe bowl in 10-inch skillet on medium heat. Add egg, stirring constantly, and sugar mixture alternately with egg mixture. Continue stirring until mixture is light brown. Spread a small amount of the egg mixture into bottom of loaf pan.
Bake in preheated oven until fluffy and golden brown, about 25 to 30 minutes. Remove loaf from pan and allow to cool completely. Pour sauce over the loaf and place in freezer. Serve immediately.
