3 pounds butter
1 (10 ounce) package preheated butter flavored crackers
3 tablespoons butter flavored cream cheese
2 egg yolks
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon vanilla extract
1/4 teaspoon lemon juice
1 cup milk
1 (8 ounce) package cream cheese, softened
1 (8 ounce) package cream cheese, softened
1/4 cup milk
2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
Place crackers on a large baking sheet. Press them down with a fork firmly. Allow them to cool completely.
In a medium saucepan over medium heat, melt butter flavored cracker crumbs; add crackers and cream cheese. Bring to a boil and stir until smooth. Reduce heat to medium and mix cream cheese, butter flavored cracker crumbs and cream cheese crumbs with 1/2 cup milk. Serve warm.
In a large bowl, combine cream cheese, cream cheese crumbs, cream cheese mixture and lemon juice. Mix thoroughly. Pour cream cheese mixture into cracker crusts and spread cream cheese mixture over crusts. Brush tops of cream cheese mixture with lemon juice mixture. Place crackers on pie. Place slices of Cheddar cheese on top.
Bake in preheated oven for 45 minutes, or until cheese is bubbly and lightly browned.
