1 cup chopped cooked eggs; optional
2 tablespoons butter or margarine
1 medium cup white sugar
4 cups whole milk
1 cup water
1 tablespoon grated carrot
1 teaspoon vanilla extract
1 tablespoon grated Parmesan cheese
2 cups graham cracker crumbs
salt and pepper to taste
2 cups cottage cheese
1 (9 inch) unbaked pie crust
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
To grease the pan, saute mixture in a large saucepan over medium-low heat until smooth and nearly the color of gold. Remove from heat and stir in 1 cup of sugar, 2 tablespoons of butter or margarine and 1 cup of milk. Stir in the prepared crust, and milk mixture, reduce heat to medium-low and simmer for three hours.
Heat oven to 375 degrees F (190 degrees C). Place pie in prepared baking dish. Crumble cottage cheese into pie crust; sprinkle with salt and pepper to taste, and press mixture down to fit within pie plate.
Bake in the preheated oven 25 to 30 minutes, or until top is golden.
