1 (9 inch) prepared graham cracker crust
2 (8 ounce) packages cream cheese, softened
1 (3 ounce) package instant vanilla pudding mix
1 cup white sugar
1 cup milk
2 eggs
2 tablespoons lemon juice
2 tablespoons lemon zest
2 cups fresh strawberries
1 (8 ounce) can sliced strawberries, drained
Preheat oven to 375 degrees F (190 degrees C).
In a large mixing bowl, beat cream cheese, pudding mix and sugar until smooth. Mix in milk and eggs. Stir in lemon juice, lemon zest and lemon zest. Pour mixture into graham cracker crust.
Bake in preheated oven for 45 minutes, let cool slightly, press pie together when lightly toasted. Serve immediately.
