1 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
3/4 cup shortening, melted
2 cups milk
1/2 cup margarine
1 cup brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
In a medium bowl, mix together sugar, baking powder, soda, cinnamon and salt. Sprinkle shortening over sugar mixture. Stir until sugar is dissolved and mixture is thoroughly carbonated.
Beat margarine, 1 cup brown sugar and 1 egg into shortening mixture until just blended. Gradually mix remaining margarine with brown sugar until mixture is very light. Fold egg into shortening mixture until well incorporated. Spread dough onto an 8x8 inch pan.
Bake in preheated oven until golden brown, about 40 minutes. Pour mixture into prepared pan. Cool completely. Frost with frosting or chocolate icing.
