4 skinless, boneless chicken breast halves
2 tablespoons olive oil
2 teaspoons vegetable oil
1 (10 ounce) package cottage cheese
2 tablespoons lemon juice
2 sprigs fresh parsley
1 red onion, thinly sliced
2 cloves garlic, minced
1 (10 ounce) can tomato paste
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large skillet over medium heat. Cook chicken until light brown, about 5 minutes. Remove, cut into 1/4 inch strips and place in floured bowl. Stir in olive oil and stir in butter and cream.
Return chicken to pan, drizzle with lemon juice and sprinkle with parsley. Pour tomato paste over chicken. Cover tightly with foil and bake in preheated oven for 30 minutes.
