Wingsuits II Recipe

Ingredients

2 small yellow onions, sliced

1 medium yellow squash, diced

3 medium carrots, shredded

1 medium zucchini, seeded and cut into 1/2 inch pieces

1 orange bell pepper, seeded and cut into 1/2 inch pieces

1 large green bell pepper, seeded and cut into 1/2 inch pieces

1 medium green bell pepper, seeded and cut into 1/2 inch pieces

1 medium medium red bell pepper, seeded and cut into 1/2 inch pieces

3 cups medium whipping cream

3 cups water

1 cup vodka

2 teaspoons lemon juice

2 teaspoons vanilla extract

Directions

Preheat oven to 375 degrees F (190 degrees C).

Place onions and squash in a large bowl. Mix in carrots, zucchini, orange bell pepper, green bell pepper, red bell pepper, whipping cream, water, vodka and juice from lemon. Pour mixture over vegetables and toss to coat.

Place vegetables in a large mixing bowl. Mix in lemon juice and vanilla extract. Pour mixture over vegetables, shake and spread evenly.

Bake in preheated oven for 2 hours, or until vegetables are tender. Serve hot or cold.

I make this 7 times a week. I found it was the thinner crisp version and that I could scramble it without any problem. I did follow some of the reviewers suggestion to put the biscuit mix in only 1/2 cup of the batter. That made it dense and not as wet as some of the other recipes.
