1 pound ground beef
2 (3 ounce) cans tomato paste
1 onion, chopped
2 eggs, beaten
1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon dried basil
1 pound cream cheese, softened
1 cup shredded Swiss cheese
1 cup milk
3 cups shredded mozzarella cheese, divided
1 pound ham, sliced into 1 1 inch strips
1 red onion, sliced into 1 inch strips
In a blender, combine ground beef, tomato paste, onion, eggs, garlic powder, salt and basil. Blend until smooth. In a saucepan, heat milk, stirring occasionally, until it is hot and slightly bubbly. Stir milk slowly, and pour over soup mixture.
In a medium saucepan, heat cream cheese; remove from heat. Stir in 1 cup cheese and saute until thickened. Spread over cream cheese mixture. Bring mixture to a boil; cook, stirring constantly, until cheese is melted (yes, you can stir!). Pour over soup mixture.
Return the ham, red onion and 1 cup cheese mixture to a boil; reduce heat, cover the pan and simmer for 5 minutes. Remove from heat and stir in 1 cup cheese mixture. Spoon mixture over soup mixture. Serve hot.
