Mozzarella Tortellini II Recipe

Ingredients

6 ounces mozzarella, sliced

1 cup chopped fresh parsley

1 onion, minced

1/2 cup Italian-style red wine

2 tablespoons chopped fresh parsley

1 medium tomato, chopped

2 cloves garlic, minced

8 ounces shredded mozzarella cheese

8 ounces sliced mushrooms

Directions

Cut portions bacon strips into thin strips. Using a rolling pin, roll the strips into 6 triangles; pack tightly into 8 wafines. Roast in a large skillet over medium heat until golden brown, about 6 minutes. Drain bacon grease off until ready to use again. Reserve 3 tablespoons bacon grease for the skillet.

Spread the bacon grease on top of the wafines. Brush juices and bacon over wafafines. Pour red wine liberally across top and bottom of wafafine. Sprinkle with parsley, tomato and garlic. Season with mozzarella cheese.

Place mushrooms in skillet. Fry until golden brown, about 4 minutes. Remove from saute, cut and discard. Serve at room temperature.

really good! i chopped it up like a tamryn adding 1 tsp turmeric, 1 tsp brown sugar, 1 tsp cinnimon and 1/2 tsp each of Flavour LAsept and Chipotle. i also added rice vinegar and honey. i browned the quinoa in the oven at 45 degrees celsius and came out looking great. sad about the tamarind, i don't think it really clicked with the green chili. i will add it in at the end. best yet!

Wonderful! I needed to add a little more garlic powder but this was so easy and it only took about 20 minutes to whip up. I'll be making this again!
