1 egg, beaten
1 teaspoon vanilla extract
1/2 cup margarine
1 cup pumpkin puree
2 teaspoons baking powder
1 1/2 cups firm white rice
1 cup packed light brown sugar
2 tablespoons margarine, melted
1 1/2 teaspoons vanilla extract
1 cup chopped pecans
1/2 teaspoon pumpkin pie spice
1/2 teaspoon lemon zest
1 tablespoon lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 large loaf pans. Place egg in large bowl. In a small bowl, beat together margarine, pumpkin and baking powder. Using wooden spoon, stir together brown sugar, margarine, pumpkin pie spice and lemon zest. Pour batter into prepared loaf pans.
Bake in preheated oven for 60 minutes, or until puffed and golden brown. Cool completely before removing from pans. Cut into rounds. Serve warm or cold.
