1 pound lean ground beef
1 1/2 teaspoons salt and pepper to taste
1/3 pound lean dried mixed meat, crumbled
1 teaspoon vegetable oil
3 tablespoons butter, softened
1/2 teaspoon dried minced onion
1 (2 ounce) package dry onion soup mix
1/4 cup all-purpose flour
1 cup quick cooking oats
1 egg, beaten
2 large onions, sliced (optional)
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, mix lean ground beef, salt and pepper, mixed meat and oil. Pour mixture along bottom of loaf pan. Place loaf pan on cookie sheet to allow juices to rise.
Bake in preheated oven for 60 minutes. Reduce temperature to 350 degrees F (175 degrees C) to allow loaf to brown. Sprinkle dry onion soup mix over loaf, followed by finely chopped onion.
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, mix flour, butter and onion. Mix together a few spoonfuls into center of each loaf. Layer with meat mixture, browning on both sides. Divide bread into 8 sections. Spread meatloaf over meatloaf.
Bake at 375 degrees F (190 degrees C) for 30 minutes. Remove loaf from oven and let cool. Serve warm or warm to prevent sticking.
