Mexican Chicken Recipe

Ingredients

8 skinless, boneless chicken breast halves - cut into cubes

1 (16 ounce) can Mexican-style diced tomatoes

1 (6 ounce) can tomato paste

4 (8 ounce) cans spiral beans with liquid

1 (2 liter) can lemon-lime flavored carbonated beverage

1 (6 ounce) can sliced mushrooms, drained

1/2 pound skinless, boneless chicken breast halves, rolled in chunks

2 cups shredded Cheddar cheese, divided

Directions

Place chicken cubes in a plastic bag and pipe shredded cheese over cubes. Keep chicken cubes in plastic bag. Shake cubes around and crush.

Prepare salsa by mixing diced tomatoes, tomato paste, beans, lemon-lime flavored carbonated beverage and mushrooms in a large bowl. Shape salsa into 3 rolls. Wrap chicken in plastic wrap. Wrap chicken with aluminum foil and place pan in refrigerator overnight, or several hours for easier hanging.

One hour before serving, preheat grill for high heat, and lightly oil grate. Discard remaining plastic wrap. Grill chicken, turning frequently, 8 to 10 minutes per side, or until no longer pink and juices run clear. Serve immediately.

It was incredible! I made this recipe as per the recipe on craigslist and it was so easy. I didn't know how to make it but I followed the directions and it was gone within minutes of making it. Pretty clever.
