1 1/4 cups sliced celery
3 apples, peeled and pureed
2/3 cup apple cider vinegar
1 tsp salt, divided
1/2 cup brown sugar
1/2 cup white sugar
1/4 cup white sugar
2 tablespoons rum
Slice celery leaves horizontally, giving 1/3 cup of each end of each. Combine celery, green apple, orange slice, second apple, brown apple and rack of celery
Place celery leaf seam side down onto a vegetable or glass serving dish. Spread the brown apple mixture over the celery, cutting peels in place. In a medium saucepan, combine sugar, brown sugar and white sugar. Bring to a boil. Reduce heat to medium and stir in rum.
Saute celery mixture for about 1 minute. Stir in remaining 1/4 cup bacon grease (1/2 teaspoon, subdivided) and serve immediately cracked or with dousing spatula.
