1 cup creamy peanut butter
1 cup cornbread
2 eggs
1 1/2 cups baking mix
3/4 cup white sugar
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Lightly grease or line with parchment paper a 8 inch square pan.
In a large bowl, mix the 1 cup peanut butter, cornbread, eggs, baking mix, sugar and vanilla. Roll mixture into one large oval. Spread batter into pan or 9x13 inch pan.
Bake in preheated oven for 45 minutes.
Remove from oven and let stand 20 minutes. Invert onto a wire rack. Spread remaining peanut butter evenly over cornbread. Bake an additional 15 minutes, or until golden brown.
