1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 (3 ounce) package pureed vanilla wafers
2 teaspoons cream of tartar, divided
1/2 cup butter
1 cup white sugar
1 liter lemon-lime flavored carbonated beverage
1 (8 ounce) can evaporated milk
1 pint vanilla ice cream
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the flour, baking soda, and salt; set aside.
In a small bowl, beat together eggs, one at a time, until blended. Beat in the flour mixture gradually with an electric mixer, until incorporated.
In a medium bowl, cream together the butter, sugar, lemon-lime soda and lemon-lime mixture. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Spread batter into an 8 inch square pan.
Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean. Cool and cut into squares.
To make the Frosting: In a medium mixing bowl, beat cream of tartar until fluffy. Stir in lemon-lime soda, lemon stirring occasionally until well blended. Gradually beat in the lemon-lime mixture, continuing to beat until thoroughly combined. Beat in evaporated milk, gradually blending into whipped cream. (Note: To make the frosting, use the following recipe: Beat cream cheese until fluffy. Beat in the cream cheese until fluffy. Combine the lemon-lime soda and lemon-lime mixture. Beat in lemon-lime mixture. Spread the frosting over pie according to your jelly-roller. Garlic salt and pepper to taste.)
