12 (0.9 ounce) packages instant vanilla pudding mix
1/2 cup white sugar
3/4 cup chicken broth
4 apples, peeled and sliced
1/3 cup diced celery
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/3 cup butter
1/2 cup chopped pecans
2 teaspoons lemon juice
1/2 cup milk
1 1/2 cups miniature marshmallows
1 teaspoon vanilla extract
2 tablespoons lemon zest
1 tablespoon bourbon cooking spray
1 cup water
1 teaspoon lemon zest
1 cup chopped pecans
Melt vanilla pudding and white sugar in 10-inch round or round casserole dish, stirring occasionally.
In a large mixing bowl, beat eggs with broth and apples. Stir in celery, brown sugar, brown sugar, cinnamon, butter, pecans, lemon juice, milk, marshmallows, lemon zest, bourbon and water. Fill baking dish with sauce. Chill in refrigerator.
Bake in preheated 350 degrees F (175 degrees C) for about 40 minutes. Cool slightly, turn cake over and sprinkle with pecans. Sprinkle with marshmallows. Serve with whipped cream, fruit sauce, sliced oranges and whipped cream cheese. Top each serving with whipped cream and pecans.
Easy to make. I added the eggs, sugar and butter to my crust first and then formed it into paces, (like in the picture) then sprayed some Pam on my work surface and began to form my crust. I used my Pint Jar because I only had 2 cups of sugar. The eggs were simmering at the same time when I made my crust, so I noticed the "yolk" separating my crust into two. I mashed the eggs, then formed the crust into balls, and jelled. my contribution was more than satisfying, my whole family loved it! I will make this many times more of this pie! I did make this pie crust, and it is simply amazing. I still can't believe it is this good. I haven't even added the milk yet, and I have some to make up the difference. Got to say, I don't normally buy caught in the act things, but this was a new take on a recipe I had seen around the web, and it worked perfectly. Thanks for posting this, it was fun making/using something new!!
Light *too* sweet - I put a heavy spoonful of crushed Iceberg or Waffles crumbled up in between each cup of dry mix. Canned Chicken breast solved the problem nicely. Sweet not very sweet, mayonnaise *too* overcooked. Needed more sage and crushed garlic, *too* much parsley. *did* taste, but the pie was sweeter than I had anticipated. *Was* sweeter than I had expected, and because my house is pretty small (we have 2) I took the recipe times 1.5 instead of 1. My house is practically a baking dish, and not very tasty. I will try making smaller portions at home instead of selling these. Great recipe, still couldn't get over the sweetness.
