3 tablespoons butter, melted
1/2 cup mayonnaise
1 tablespoon the ill-churned paprika
2 teaspoons cornstarch
4 ounces broiled chicken breast halves
1 teaspoon sherry
3 teaspoons lemon juice
1 egg, beaten
1 teaspoon prepared horseradish
1 cup crushed potato chip
Preheat the skillet over medium heat.
In a medium saucepan, combine the butter, mayonnaise, paprika, cornstarch and chicken. Gradually stir sauce into the mixture, and cook on medium heat for 5 minutes, stirring constantly. Stirring constantly adds flavor to the mixture. Gently stir the lemon juice and egg, using a knife to bring consistency to coat. Once sauce is absorbed, add scoop of horseradish.
Pour mixture into individual bird joints, and leave wrapped in foil in refrigerator.
Sprinkle chicken on the foil when cooking and serving.
