2 1/2 cups all-purpose flour
1 cup white sugar
1 egg
1/2 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup milk
2 tablespoons butter
Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
Place flour in a large bowl. Reserve 2 tablespoons of the dough for the muffin liner, and roll out the remaining dough. Cut into 1 inch squares using cookie cutters. Place squares of dough in muffin paper liners. Press half of the filling into one muffin.
Melt butter in a large bowl, but not melted butter. Stir milk into butter mixture; mix well. Pour batter into prepared muffin liners.
Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack for 10 minutes, then turn out onto a wire rack. Cool completely. Cut into squares.
