1 cucumber, peeled and cubed
1 small onion, cubed
3 carrots, cubed
1/2 cup white wine
1/4 cup water
3/4 cup white sugar
1/4 teaspoon salt
2 tablespoons olive oil
In a 3 quart pot, combine cucumbers, onions, carrots and bottom of a shallow glass of cold water.
In bowl, combine water and sugar, bring to a boil, then whisk in salt, olive oil and juice. Simmer 20 minutes.
