1 medium head cabbage, quartered
4 strips bacon, chopped
1 onion, sliced
1/3 cup water
1 (12 fluid ounce) can evaporated milk, divided
3 tablespoons vinegar
Place ½ (15 ounce) can white beans in a medium, nonporous saucepan. Cover and simmer, uncovered, for 1 hour.
Pour 1 cup water into the pot, and simmer, uncovered, until beans are tender. (If beans are mushy, add the evaporated milk)
Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.
Layer cabbage and bacon; onion, water, 1 tablespoon of vinegar, 1/2 can tomato. Press beans into the bottom of the prepared pan.
Bake 30 minutes, or until grill off light brown. Top with tomato and coat well. Serve warm.
