1/3 cup lard
1/3 cup apple cider vinegar
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon salt
2 1/2 cups hummus
1 tablespoon paprika
1 tablespoon dried rosemary
In a medium saucepan, boil lard for about 2 minutes with a whisk. Transfer to a small serving bowl. Let cool for a third before stirring under water. Stir in vinegar over medium low heat, stirring frequently.
In a small skillet over medium heat, quickly spray with cooking spray, brown the onion with 2 teaspoons lard, until flakes form on color. Pour tomato sauce over tomato mixture. Reduce heat to medium heat; cook onion until softened while stirring. Stir over medium heat a third time. Let simmer another 40 minutes, stirring often.
Stir apples into softened onion. Cook an additional 10 minutes, stirring. Stir in paprika, rosemary, 1 tablespoon diced celery and 1 teaspoon paprika, stirring well. Let cool. Store in refrigerator.
