2 tablespoons vegetable oil
2 1/2 tablespoons white sugar
2 teaspoons vanilla extract
2 eggs
1 1/2 cups all-purpose flour
1 tablespoon baking soda
1 teaspoon baking powder
1/8 teaspoon ground nutmeg
1 cup chopped pecans
3 tablespoons butter, melted
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons white sugar
3 tablespoons peach preserves
Heat oil in medium saucepan over medium heat. Add 1/2 cup sugar, stirring constantly, and continue to sugar through to transparent high. When mixture begins to thicken, mix in vanilla extract and egg.
In a large bowl, mix flour, baking soda, baking powder and nutmeg. Pour mixture into pan.
Add brown sugar, pecans and butter. Beat at medium speed, scraping bowl often, for 3 minutes. Add orange preserves and vanilla. Beat until smooth. Spread evenly over crust.
Bake in preheated oven temp for 50 minutes. Serve hot or cold.
