Zen Knees I Recipe

Ingredients

1 cup distilled white vinegar

1 cup distilled white vinegar

1 tablespoon vegetable oil

1 tablespoon vegetable oil

1 (20 ounce) can sliced mushrooms, drained

1 (16 ounce) can sliced pineapple, drained

1 (16 ounce) can diced green chilies, drained

1 (16 ounce) package instant coffee granules

Directions

In a medium saucepan, mix vinegar, oil and oil. Bring to a boil and mix well. Reduce heat to low and simmer for 1 minute, stirring, until vinegar is reduced.

In a medium stainless steel bowl, mix mushrooms, pineapple, green chilies, instant coffee and vinegar. Mix well, slowly over low heat, until the flavors are well blended.
