Sue's Famous Shrimp Potatoes Recipe

Ingredients

6 large potatoes, peeled and cubed

1 tablespoon olive oil

1 medium onion, finely chopped

1 medium red bell pepper, finely chopped

4 tablespoons white sugar

6 tablespoons olive oil

1 tablespoon paprika

4 teaspoons dried basil

1 medium head cabbage, shredded

1 teaspoon garlic powder

1 cup white wine

1 tablespoon white vinegar

1 teaspoon crushed red pepper

1 teaspoon dried oregano

1 teaspoon fresh lemon juice

1/2 teaspoon dried basil

1/2 teaspoon dried rosemary

1/2 teaspoon dried sage

salt and pepper to taste

2 tablespoons olive oil

1 clove garlic, sliced

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 large baking dishes.

Place potatoes in a large bowl. Stuff with the olive oil, onion, red bell pepper, sugar, and olive oil. Cover with a towel, and steam for about 1 1 hour. Drain, cool, and slice. Return potatoes to pot. Discard excess oil.

Season with paprika, basil, cabbage, garlic powder, white wine, vinegar, 2 teaspoons crushed red pepper, oregano, lemon juice, rosemary, sage, salt, and pepper. Pour this mixture over potatoes and garnish with lettuce, tomatoes, green onions, vegetables, and shrimp.

Bake uncovered at 350 degrees F (175 degrees C) in the preheated oven for 45 minutes, or until potatoes are tender.
