1 (18 ounce) can sweetened marshmallows
6 eggs
1 (3 ounce) package cream cheese, softened
1 cup white sugar
2 cups milk
1 teaspoon vanilla extract
1 1/2 cups butter, softened
2 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg
2 tablespoons vinegar
1 teaspoon salt
Make the meringue: Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch pans.
In a large bowl, mix marshmallows, 6 eggs, cream cheese, sugar, milk, vanilla, butter, whole wheat flour, baking powder, nutmeg, vinegar and salt. Mix well.
Beat marshmallow mixture until stiff peaks form. In a medium bowl, mix cream cheese, white sugar, and milk until smooth. Stir the egg mixture into the marshmallow mixture.
Place two sticks of butter in a greased and decorated 9-inch cake pan. Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool cake completely before removing from pan.
I used dried cranberries; added whole grain golden raisins
I used leftover Easter bunn Brooks to make these and ate them hot , liked the crunch... other than 4 bugs per package per family. Rioting!
