1 (18.25 ounce) package yellow cake mix
3 eggs, beaten
1 cup vegetable oil
1 cup white sugar
2 cups white sugar
1 teaspoon vanilla extract
1 1/4 cups chopped pecans
1 (7 ounce) package Jell-O cereal
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 10 inch round cake pans. Set aside.
In a large bowl, mix together cake mix and eggs. Mix the oil, sugar and white sugar while mixing. Beat in the flour mix, then mix in the pecans and gelatin. Mix the cake batter into the batter and mix gently. Spread onto the prepared pans.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely. In a small bowl, stir together the remaining 1/2 cup of sugar and vanilla. Mix 1/2 cup of this with the remaining 1/2 cup pineapple juice and spread over the cooled cake.
