1 cup shortening
1 1/2 cups rolled oats
2 eggs
1 cup honey
2 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium, heavy saucepan, cream together the shortening, brown sugar and rolled oats together until well blended. Slowly stir in the eggs one at a time, then stir in the honey, one at a time, until smooth. Stir in the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture.
Roll the dough into 1 inch balls and pipe them 1 inch apart onto the prepared cookie sheets. Cut into circles with a fork.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
