8 ounces fresh spinach
3/4 cup olive oil
1 pound onion, chopped
3 red onions, chopped
1 (8 ounce) container sour cream
3 tablespoons all-purpose flour
1 cup sliced mushrooms
2 tablespoons chopped fresh parsley
1/2 cup crushed cherry tomatoes
1 cup sliced mushrooms
2 tablespoons minced fresh sage
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together spinach, oil, onion, onions, sour cream, flour, mushrooms, parsley and tomatoes. Mix together, and transfer sauce mixture to a 9x13 inch baking dish.
Bake in preheated oven for about 30 minutes, or until toothpick inserted in center comes out clean.
