1 tablespoon cornstarch
2 tablespoons unsalted butter
1/2 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon dried bread crumbs
1/8 teaspoon coarse saltine cracker crumbs
1/8 teaspoon dried oregano
2 cups sliced fresh mushrooms
2 eggs
3 tablespoons lemon juice
1 1/2 teaspoons lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
In a medium bowl, mix cornstarch, butter, salt and pepper, and press crumbs into bottom of pan. Sprinkle cracker crumbs over bottom, then sprinkle with oregano and onions.
In a medium bowl, mix eggs, lemon juice and lemon zest. Mix together and sprinkle over crust.
Bake uncovered in preheated oven for 45 minutes.
