1/2 cup butter
1/2 cup coarse brown sugar
1/2 teaspoon salt
3 eggs
1 cup all-purpose flour
1 teaspoon baking powder
1 cup milk
1 cup white sugar
1/4 cup vegetable oil
1 teaspoon vanilla extract

1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon salt
1 teaspoon lemon zest
Preheat the oven to 300 degrees F (150 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, salt, eggs, flour, baking powder and milk. Mix in the 1/4 cup sugar and oil until well blended. Mix in the flour, baking soda and baking powder; mix until well combined. Gradually mix in the sugar mixture until just blended. Fold in the flour mixture until just blended with the milk. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 7 to 8 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
