1/2 cup butter, softened
1/4 cup packed light brown sugar
1 (8 ounce) can frozen lemonade concentrate
1 (8 ounce) container honey flavored Jell-O mix
1 (3 ounce) can evaporated milk
Heat oven to 300 degrees F (150 degrees C). Lightly grease (preserving liquid) 8 muffin cups. In a large bowl, combine butter, brown sugar, lemonade concentrate, honey flavored gelatin, lemon zest, and lemon juice. Stir until each is thoroughly dissolved. Pour batter into prepared muffin cups.
Bake in preheated oven for 20 to 25 minutes, or until lightly browned. Cool in pan on wire rack.
