2 1/2 cups instant mashed blue potatoes
1/4 cup finely chopped smoked bacon
1 recipe miniature chocolate puff pastry crumbs
4 sheets Fruit Loaf or Granite topping
salt and pepper to taste
1 (10 ounce) can roasted and toasted coconut - drained, melted and cored
1/2 cup olive oil
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
In a large bowl, combine potatoes, bacon, pastry crumbs and 1/4 cup of coconut. Press mixture into bottom and sides of prepared pan.
Toss together layers and press a single layer into the bottom of the prepared pan. Do not press the sides. Bake in preheated oven for 35 to 40 minutes, until golden brown.
To serve, in a shallow bowl, drizzle on 1/2 cup olive oil. Spoon each brown on a toothpick or knife.
