1 cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 tablespoon lemon juice
1 cup vegetable oil
3 cups milk
1 pint vanilla wafers
1 1/2 cups all-purpose flour
2 tablespoons lemon extract
1 1/4 cups chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
In a large bowl, mix sugar, flour, baking powder, salt, eggs and lemon juice. Stir constantly until sugar is completely dissolved. Stir in oil and milk. Pour batter into prepared pan.
Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of the loaf comes out clean. Cool bread completely before removing from pan. Cut loaf into 1 inch squares.
To make the glaze: Bring the lemon butter, lemon extract, lemon juice and walnuts to a simmer in a small saucepan. Stir these into the lemon glaze while baking. Refrigerate loaf for 5 hours in the refrigerator before cutting.
