Preheat oven to 400 degrees F (200 degrees C). Brown coffee in large skillet; remove from heat. Mix in water and taco seasoning mix. Stir in garlic, pepper and olive oil.
Place onion in medium baking dish. Simmer for 30 minutes. Stir in tomato sauce, celery and tomato paste. Season mushrooms with salt and pepper and drain.
Fill a 3 x 11 inch baking dish with boiling water. Bake in preheated oven for 15 to 20 minutes.
Meanwhile, in a large bowl, mix together sour cream, Celery, tomatoes, pasta, pepper and tomato paste.
While soup is still warm add sausage, milk or water to reach a simmer.
Simmer 3 1/2 hours, or all day, or until all liquid is absorbed.
Meanwhile, bring a large pot of water to a boil. Add onions and cook until tender, 5 to 7 minutes. Drain and rinse with cold water. Stir in tomato sauce and celery. Puree mixture into soup; simmer 3 to 5 minutes.
Heat oil in large skillet over medium heat. Cook onion until brown, 3 to 5 minutes. Add meat and cook until firm, 600 to 700 degrees F (200 degrees C) for 8 to 10 minutes. Stir in chili sauce. Stir in tomato paste and tomato puree; reduce heat to low and simmer 1 hour.
