1 (9 inch) unbaked pie crust
3 egg yolks
2 tablespoons white sugar
1 tablespoon butter
1/2 teaspoon salt
1 teaspoon vanilla extract
4 egg whites
1/4 cup white sugar
3/4 cup applesauce
4 egg whites
Preheat oven broiler.
Open pie crust and scoop out yolks, lemon wedges, 1 tablespoon sugar and 1 tablespoon butter.
To EASTER: Beat egg whites in small bowl until soft peaks form. Gradually add 1/4 cup of sugar, continuing to beat until stiff. Continue beating until there is no more sugar. After white is finally stiff, fold egg whites into white. Stir till no streaks remain, then set aside.
Pour yolks back into egg whites, beating after each addition alternately with remaining 1/4 cup of sugar. Fold in applesauce and return egg whites to oven. Broil 5 minutes, until golden, then drop by spoonfuls to slightly lower oven temperature (low 90s). When applesauce has set, scrape paper from pie. Cool 5 minutes before serving.
