1 (12 fluid ounce) can or bottle beer
1 medium head cabbage, halved
3 carrots, sliced into 1/4 inch rounds
1 small onion, sliced into 1/4 inch rounds
1/2 cup wine
salt and pepper to taste
2 pounds salmon fillets
4 ounces shredded sharp Cheddar cheese
In a large bowl, mix beer, cabbage, carrots, onion, and wine. Mix together and refrigerate.
Preheat oven to 350 degrees F (175 degrees C).
Slice the fillets around the edges to make a surface for the wine and salt and pepper mixture. Place fillets on a baking sheet and brush on the remaining wine and wine mixture. Brush on the salmon fillets.
Bake in preheated oven for about 30 minutes, until fish flakes easily with a fork. Garnish with cheese and serve with your favorite taco seasoning blend.
