2 eggs
1/3 cup vegetable oil
1 cup water
1 (10 ounce) package dry sherry cod
1 teaspoon paprika
1 1/2 cups yellow cornmeal
1/8 teaspoon salt
1/4 cup vegetable oil
1/4 cup brown sugar
Heat oil in a large saucepan over medium heat. Add water and cook until bubbles begin to rise. Reduce heat to low and stir in cod. Cook until steaming, turn and cook another minute.
Meanwhile, stir together the paprika, cornmeal, salt, oil, brown sugar, brown sugar and eggs; stir just until blended. Simmer over medium heat for about 20 minutes, stirring constantly. Remove from heat and stir in fish. Cook until fish flakes easily with a fork.
Pour in the eggs and oil mixture. Bring to a boil, stirring occasionally, and cook for about 1 minute.
