1 cup margarine, softened
1 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons lemon-lime citrus zest
1 tablespoon lemon juice
1 cup chopped onion
1 (12 ounce) package frozen mixed cherry tomatoes, thawed
Preheat oven to 400 degrees F (200 degrees C).
Sift margarine, flour, salt, lemon-lime zest, lemon juice and onion into a medium saucepan. Bring mixture to a slow simmer. Stir in the tomatoes. Pour mixture into a 2 quart casserole dish and sprinkle with cherries.
Bake at 400 degrees F (200 degrees C) for 30 minutes or until thickened. Season with lemon-lime zest and lemon juice.
