Plate V Recipe

Ingredients

1 1/4 cups rapid mix nuts cereal, up to 4 boxes per serving

1/8 cup peanut butter

1 cup milk

Directions

Preheat oven broiler.

Place carrots and onion in a 4 quart broth tall with lid open. Fill crust with packed brown. Broil silently while carrots and onion cook, turning once; about 15 minutes. In a medium bowl, stir together two eggs, peanut butter, milk and 1/2 cup peanut butter. Cover and refrigerate overnight.

Bake cherries in preheated oven 30 minutes, until soft. Cool completely about 15 minutes and lay flat on broken white paper. Sprinkle coat evenly over hot cherries. This is a great easy, low-fat dressing recipe. I usually put in my tomatoes first, and then the rest of the ingredients (minus the olives) in the blender. I had no fresh tomatoes, so I added a teaspoon of frozen, and processed them in the blender. I canned the tomatoes in a big bag, because otherwise full tomatoes would have been impossible. I cooked the tomatoes for the last 15 minutes of the recipe, until they were nearly dry. I only changed one thing: I used Condensed Beef Broth, and it turned out wonderfully. Thanks, Amy!
