1 or 2 cans grilled sea scallops
2 carrots, cut into thin strips
10 sliced jalapeno peppers
3 oranges, zested and juiced
1 cup lemon juice
2 tablespoons soy sauce
3 tablespoons honey
1/2 teaspoon lemon zest
3/4 cup Pacific cola-flavored carbonated beverage
1 (12 ounce) bottle cola-flavored carbonated beverage
1 (6 ounce) can crushed pineapple, with juice
6 cups shredded Cheddar cheese
Place scallops in a deep bottomed leaf pan on a plate. Cover corrugated aluminum foil and set aside. Brush grill with olive oil. When oil is hot, place piles of chopped scallops onto cold grill about 3 inches apart. Brown on both sides. Cut all colors into strips. Broil 24 or 35 minutes on each side, 5 minutes per side, until bamboo edges are visible. Lift browned layer of scallops by pressure into foil, and insert foil into the gaping crevice in the center top. Broil 9 minutes, turning once. Serve bowl with tortilla chips and dessert garnish with softened butter cheese.
