2 white onions, chopped
2 jalapeno peppers, seeded and minced
2 red onions, chopped
1 medium potato, peeled and cubed
2 medium zucchini, sliced
1 medium red bell pepper, seeded and chopped
1 cup diced celery
2 cups shredded Cheddar cheese
1 cup sour cream
1/8 teaspoon ground black pepper
1 1/2 tablespoons horseradish
Melt onions and jalapeno peppers in a large skillet over medium-high heat. Reduce heat, and simmer for 10 minutes, tossing frequently, until onions are heated through.
Stir in potato and brown pepper; heat through. Stir in celery, cheese and Worcestershire sauce.
Pour vegetable mixture into prepared bowls, stirring frequently to mix. Spoon soup mixture into bowls and toss to coat. Garnish with cheese, sour cream and pepper. Sandwich salad with celery mixture, serving warm or cold.
