1/4 cup olive oil
5 teaspoons Tabasco sauce
2 shallots, chopped
1 cup chopped onion
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
8 cups sherry
1 pound mozzarella cheese
1/2 cup olive oil
1/4 cup fresh lemon juice
1/2 onion, thinly sliced
1 teaspoon sliced red pepper
1/2 teaspoon ground cumin
salt and black pepper to taste
Lightly oil a large skillet. Cook Tabasco sauce in oil over medium heat and remove from heat. Stir in shallots, onion, flour, Worcestershire, mozzarella cheese and olive oil. Cook until mixture is thickened. Stir in lemon juice and onion. Gradually mix mixture. Return Tabasco sauce to sauce and add crawfish. Season with ketchup. Serve immediately.
