Zucchini Florentine Avocado Soup Recipe

Ingredients

1/4 cup olive oil

8 grapes -- peeled, cored, and cut into one inch balls

salt and pepper to taste

Directions

In a large skillet over medium heat, saute kale, celery, onion and garlic in olive oil until tender. Add potatoes, carrots, and salt and pepper to taste. Season with salt and pepper to taste and cook 7 minutes, then reduce heat to medium low and add oil. Simmer, turning often, until vegetables are heated through and mixture thickens, 3 minutes.

These were pretty good, but the shrimp were weak. And the sauce was pretty thin. But the taste was really good! I'll be making this again!
