1 (12 ounce) package cream cheese, softened
1 egg, lightly beaten
3 tablespoons grated lemon zest
1/2 cup vegetable oil
1 teaspoon lemon juice
1 1/2 tablespoons lime juice
1 large peach - peeled, cored and cut into 1/2 inch slices
Preheat oven to 350 degrees F (175 degrees C). Spread the cream cheese and egg over ice in the pie shell. Sprinkle lemon zest over cream cheese and egg piece.
Bake in preheated oven for 21 minutes, or until a toothpick inserted into the pie comes out clean.
To make the fruit garnish, stir lemon juice in microwave at medium-high 1 minute; beat the remaining lemon juice with 1 cup lemon-lime flavored carbonated beverage in small bowl.
Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9-inch pie pans.
In a medium bowl, mix together cream cheese, egg and lemon zest. Spread mixture evenly over two of the pie layers.
Bake with pie crusts uncovered for 40 minutes in the preheated oven, or until golden brown. Cool completely before cutting into squares.
