2 tablespoons olive oil
3/4 cup red wine vinegar
3 pounds shredded Italian cheese
1/2 cup shredded Cheddar cheese
1 teaspoon dried minced garlic
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon dried parsley, plus 2 teaspoons dried basil
1/4 teaspoon dried onion
Heat olive oil in a saucepan over medium heat until slightly thickened. When pan is hot, add vinegar and vinegar mixture; stir for 10 minutes; remove pan from heat. Stirred vinegar mixture while remaining hot in small bowl, whisking constantly until well blended.
Stir in cheese, cheese, garlic, basil, oregano, salt and onion powder; whisking until nearly blended. Mix cheese mixture with the vinegar mixture. Transfer to a cone shape.
Cover and refrigerate in refrigerator. Serve chilled.
