2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 egg, beaten
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon dried Italian seasoning
1 (14 ounce) can crushed tomatoes with green chile peppers
1 (12 ounce) can crushed pineapple with juice
1 (12 ounce) package cream cheese
Preheat oven to 350 degrees F (175 degrees C).
Place spinach in a large nonstick skillet over medium heat. Cook, turning frequently, until bottom is golden brown, about 8 minutes. Drain, core and reserve 1/2 cup. Reserve 1/2 cup for other uses. Pour egg and butter into spinach, bringing to a slow simmer. Slowly drizzle over chicken. Sprinkle flour over chicken and spinach, then stir in the Italian seasoning. Place cream cheese in the bottom of a 9x13 inch baking dish. Top with cheese and sprinkle with remaining Italian seasoning. Bake at 350 degrees F (175 degrees C) for a minimum of 30 minutes.
